Quick and easy, indulge in this dish that’s full of flavour and crunchy lotus root, from Shreyaa’s Kitchen

Carrot 3-4, cut into matchsticks
Lotus root stems 3-4cut into rounds
Sesame oil 1tbsp
Togarashi chili powder 1tsp
Mirin ¼ cup
Sake 2/3 cup
Soy sauce ¼ cup
White wine vinegar 1tsp
Red chilies 3-4 chopped
Sugar 1tbsp
Water ¼ cup
Salt to taste

Heat sesame oil in a pan. Add the carrots and sauté. Now add salt, red chilies and the lotus root stems. Toss for a few minutes.
Add the sake mirin and the rest of the ingredients.
Cook for approximately 10 minutes on medium flame.
Garnish with chopped red chillies or spring onions and roasted sesame.
